I have an original Xoom WiFi running ICS 4.0.4.

Following power down/ power up cycle, I can run the tablet for a day or two. Then opening most apps generate an error:

"Unfortunately, Gmail has stopped."
"Unfortunately, Maps has stopped."
"Unfortunately, Pulse has stopped."
"Unfortunately, Calendar has stopped."
"Unfortunately, Browser has stopped."

Powering down and up fixes the problem for a day or two, then it returns.

Any tips on how to fix this? Thanks.

Sounds like a memory issue or you last update needs to have a factory reset done to clear out some incompatible elements.

I would back up your data an do a factory reset and see if the problem persists.
