what can I do when android updates automatically without WiFi and destroys my data plan in my sleep?

Have a galaxy S5, this morning it started downloading and update and my bedroom doesn't consistently get WiFi so androids update was entirely on my data plan and I woke up to find out I have exceeded my data limit. I find this completely unacceptable and want to know if there is anything I can do to either get my data back or get Google to pay for my data overage.

You can try, but I don't think it'll work.
On the phone settings, and normally on by default, you can have the OTA updates to download only when on WiFi.

Talk to you carrier, they might help you out a bit.
