Ok so I just rooted my HTC Desire and I'm seriously considering installing the cyanogen mod but I need to know first, what is erased when I flash a rom?

Pictures?
Videos?
SMS/MMS?
Accounts?
Apps?

et cetera...

Can someone elucidate me?

The first time you flash a new rom you need to do a full wipe including system partition so yes everything will be lost.
You need to backup everything you want to save.

Your download apps will get restored once you log back in to the same google account you use.

Get Titanium backup to restore other apps but don't restore days imo

There is an app in the market called SMS Backup by n2manager - I've never used it myself but it says it will backup your SMS.

Be careful when restoring data like SMS or any System data to a new ROM. Go Slowly. Often there are System compatibility issues with system data. Make a nandroid after you get your initial setup in place, before you start restoring system data. Then if you have a problem you can just nandroid back to before you had the problem.
