Has anyone tried or done any comparisons to see if turning off the data encryption on the disk improves battery life by any measure.

Yup, it does, but doubt it'll be noticeable unless you read/write files all day long. Performance is affected (again, not noticeably) and since the system is doing extra efforts when the disk is encrypted, it's only logical that it'll also consume more battery. As to how much more, though, that's debatable. Here, read these, they're interesting :)

Isnt the only way for one to disable the encryption to be rooted?

Affirmative. You can basically do whatever you want to do to the Nexus 6 with WugFresh's Nexus Root Toolkit. Root, disable encryption, enable the LED, enable double-tap to wake.

Not necessarily. The stock Nexus kernel enforces encryption. In order to bypass enforced encryption, you need to load a custom kernel that makes encryption optional (user selectable in the Security Tab I believe). You need not necessarily be rooted since you can load a custom kernel without root access (via fastboot/custom recovery).

Oh... and the process to unencrypt is destructive... it completely wipes your user data and internal storage.
