Which Android 7.0 Build should I sideload on Nexus 6?

For some reason, my Nexus 6 has not gotten an Android 7.0 update. It has continued to get 6.0.1 updates.

If I want to sideload the 7.0 update (I have never done this before but I've read up on it), Can I get the latest and go with it, or would I have to do a 2-step process; get the original update and then do the latest update on top of it.

Here are the build available on Google listed by release dates:
7.0.0 (NBD90Z) <-- Original October 7.0 OTA release
6.0.1 (MMB31C) <-- October 6.0.1 update
6.0.1 (MOB31K) <-- November 6.0.1 update; MY PHONE HAS THIS
7.0.0 (NBD91P) <-- November 7.0 update

Now we get a new problem! Today two new build numbers have shown up for the Nexus 6--7.0.0 (NBD91S) and 7.0.0 (NBD91U). And no indication yet about what the difference might be between 'em!

Please post if you find any explanation of these two new builds!

EDIT Just saw this in a block of comments on Droid Life:

"The 91U has the newer bootloader (72.01) which was found in the previous 7.0 release. 91S has bootloader version 72.00. Not sure why. As mentioned by Dirge, use 91U and you will be fine."

And this on xda-developers:

"Different bootloaders.
nbd91s has bootloader-shamu-moto-apq8084-72.00.
nbd91u has bootloader-shamu-moto-apq8084-72.01.

Same radios for both 91S and 91U. Only the bootloader versions are different. 91U has the same version as the previous 7.0 release."

If you sideload the full OTA from the Google developers site, you can sideload the latest one (don't have to worry about the in-between versions)
