Bluetooth paring

I have an old phone (Virgin mobile, no contract), a jambox speaker and an N7.

I got the jambox to use as a bluetooth speaker for the N7.
When I got home I realized that it works as a speakerphone too.
I took out my old cell phone and it pared and recognized the jambox just fine.

The best use of a speakerphone for me would be in the car, but I didn't really want to set up the jambox in the car.
I looked at the N7 and realized it has a speaker, a mic, bluetooth and I use it in the car already.

So I tried to pair the phone to the N7. It pared and listed the N7 on the phone. I thought I had a cool new feature, but the phone said 'Not Supported Device' for the N7.
I think it must be the bluetooth profiles that the phone will understand match the jambox, but not the N7.

1st question: What is the profile used by the jambox and the phone so that they recognize each other?
2nd question: What are the bluetooth profiles used by the N7?
3rd question: Why doesn't a modern device like the N7 have a profile the old phone can understand? (what ever happened to backwards compatibility?)
