If I root my Nexus, but don't flash a ROM....will I still get OTA updates? I'd like to stay stock but would like the benefit of rooting so that I can run some apps that require it.

Yes, you can. I did just that...however, I lost root afterwards. But, I simply reinstalled TWRP and reflashed SuperSU. Root was reestablished in about two minutes.

Released from the EVO 4G LTE using Android Central Forums

Yes, simply keep the stock recovery when you do the rooting/unlocking. Also, if you install ota rootkeeper, it should prevent loss of root following an ota update.

unlocking bootloader or rooting does not affect your ability to get OTA update.

If you flash custom ROMs or change the stock OS(You might get OTA but it might fail to install) to a great extend you will not get OTA
