Default How much free space should be on new Nexus 7?

    It is 32GB model.
But now there is free only 26GB.

Mine had around 28GB free before anything was installed. That's the OS, cached stuff from trying to auto-restore a Google account, included apps, etc.

    10.75 Gb's on the 16 Gig.
    26.10 Gb's on the 32 Gig.
    I had a 16 for one day.
Returned it for the 32 for only $40.00 more.

    Wow.
    1.45 more huh?
That's what I seen on mine.. had it less than 24 hrs.
I went to Walmart and traded it in for the 32 Gb.

Strange that people are getting varied amounts of storage. Maybe it's after the first setup, photos, emails and other stuff being synced with Google account?

Hard to say what's going on - you may want to reload the stock firmware just to get it back to a known state. That should take care of your storage issue.
