I'm looking to change the stock female choice to something else, but apparently isn't possible with the Pixel XL VZ

No promises, but try this:

Settings -> Languages & input -> Text-to-speech output -> Gear icon (alongside "Google Text-to-speech Engine" -> Install voice data - > English (United States) -> Voice set 1.

Test the output using Settings -> Languages & input -> Text-to-speech output -> Listen to an example.

This changes the Text-to-speech voice but *does not* change the voice feedback from, for example, an OK Google search.

Settings>language and input >languages. Go to English and it lets you change what English country. It even does it in maps which is fun because it is really hard for her to say the difficult street names we have here in Michigan.
