From the looks of 2 maps, one on Google+ Project Fi Community and the other on Reddit Project Fi - Map we're just over 3,000 Fi members.

Where is the Google+ map?

If you have an activated invite, go to Google+ and in Communities search for 'Project Fi Community'. Request membership. Once accepted, it's a post about a day ago.
Edit: Also, you can go into your Project Fi app, Support tab, Project Fi Community.
