Unable to find Gingerbread keyboard in official Android update

Hello, I'm new here, and I want to apologize beforehand if I have missed any forum courtesy.

I am a proud owner of the HTC Desire Z (unrooted), and was over the moon when I received the Official 2.3.3 update nearly a month ago. And as many other Desire Z owner, the joy of the device is pounding out the QWERTY keyboard.

But I still use the on-screen keyboard from time to time,cand because I type in various languages all the time, I have apps such as Simeji and CedIME installed for thr different languages I need. And as I was remember how Google had advertised it's awesome Gingerbread keyboard improvement, I decided to switch input mode back to "touch input" to see what it's like.

But it wasn't even there. I looked in settings too and also found nothing of the sort. Can anyone explain this to me? I did a bit of searching and found nothing of the like just yet. Is this a known HTC issue? Or is it a Desire Z-specific issue? Or is it just me? Any help is appreciated.
