You can safely root your htc desire 600 to Lollipop by using oneclickroot. Just follow the below simple steps
1. Download oneclickroot
2. Connect your phone to PC using USB.
3.Go to "developer option" and enable USB debugging mode

Welcome to Android Central! There is no official Lollipop update for that phone. You'd have to root the phone and find a custom Lollipop ROM to install.
