Cho's Kang Chaos ROM and Viper4G are my favorites so far...at least until an official build of CM9 or 10 is released. But even then, it'll be close. Viper4G requires the latest radio and firmware updates, so you'll have flash those first, which requires S-OFF. Chaos is based in the 1.13 RUU though, so no need to upgrade. Give it a shot, you won't be disappointed.

Viper4G is the new "it girl" right now, and it is fantastic. On the other end of the spectrum, if you're looking for something lighter and mostly de-sensed, give Newboy's CleanROM DE a spin.
CM10 (now "CMX") is coming along nicely; I'm bouncing back and forth between it and Viper right now. - 08-03-2012, 08:59 AM #6

Been using Flex360's stock with goodies. Its up to version 1.76. I've tried several others and this one seems the smoothest and most stable of all. I've de sensed with nova prime, and DeSenseICS V0.06 zip (generic). I get great battery life and I'm a very heavy user, so my screen stays on constantly. I have not encountered any glitches, hiccups, or issues. Great ROM. Newboyx has a good ROM if you want a slim semi AOKP style ROM. Most sense has been removed. Only issues I had was very minor instability on my phone. ( network related) but otherwise a good daily driver. I still keep going back to stock with goodies. YMMV.

I want to keep the burst shot and take pictures while recording..Should I stay on stock sense roms or is this incorporated into the other "vanilla" roms?

The viper4g rom is cool for customisation but in all honesty it feels kinda choppy ,apex and nova are both laggy even when de sensed and it won't be updated for a week or 2 from now the dev, so I'm using meanrom and its great on battery life and smooth I'm running apex over it, its amazing and theming it just requires flashing when on viper it was built with it, also viper4g doesn't have the dual core mod built in and when I flashed it got more laggy weird because they are made from same dev meanrom has dual core built in and works great I get a average of 11 hours on average use playing some games, on xda ,Facebook, listening to music and brightness is all the way up, I do have to admit thought the first day of it being flashed your battery stats are off
