Finally rooted....but have one question!!!

Finally rooted....but have couple questions!!!

I finally got my EVO rooted and NAND unlocked. I would like to try to flash some custom ROMs to my EVO.....but there's a problem....some of the ROMs that I would like to flash has some of original apps (i.e Nascar, Sprint Nav....ect) taken out. How do I go about to install them back on after I flash the custom ROM of my choice?
Second, rite now I'm running rooted stock ROM, how do I get the OTA sprint just rolled out last Monday?

The Dev usually has a note in the post saying how to reinstall the removed apps ( for Fresh ROMs, he has a zip download of all the *.apk's he removed ).

Yup. Super easy to reinstall the ones Fresh removed.
