Sorry I'm pretty noob so here it goes: My understanding of capacitive touch is that the phone buzzes when you press a button. Is there a way to turn this off or is it always on?

You can turn it off. it's called haptic feedback. menu>settings>sounds and display>haptic feedback (uncheck).

I'd give it some time, it really grew on me.

Reshp1 has it covered, but just for clarity, the phone vibrating isn't part of the capacitive touch screen. The capacitive touch is just one of the ways a screen can tell if something is touching it (resistive touch is the other popular method) and doesn't have anything to do with what the phone does after you touch it. :)
