Stock Apps

So since I got my One from AT&T they hid all of the HTC stock features like Drive mode, flashlight etc. Is there a way I can still get those since they are on my phone, but just hidden? I'm a new convert to Android so this might be an easy question. I would like to root my phone, which I would think these apps would become visible after rooting. However, I am a little nervous rooting my phone by myself so I have been waiting to find someone here locally to walk me through.

They will show up if you install an alternate launcher, either a full homescreen launcher like Apex/ADW/Nova, or a app launcher like circle launcher etc.
