Remapping bluetooth headset buttons

Hi! I just got a new motorcycle helmet that has bluetooth built in. I would really love to be able to double tap one of the buttons on the helmet and have it activate Utter! or some other voice activation app where I can speak a command. So far I cant find any information on how to do this. Any ideas on how I could get it to reporgram what the button does or how my phone interprets it?
