Volume Down and Power in that order and hold for 2-3 seconds (ICS), or hold down the Home and Power button(GB).

Hijack:
I still prefer power + home over the other method - it captures an unscaled image of your screen. The other way works, but it shrinks your image slightly, making on-screen text harder to make out.
