If I use the HTC DevUnlock tool, can I delete all the stock apps that Verizon put in this Droid Inc2? Like the Blockbuster app, Verizon Tones & Videos, NFL mobile, etc. Or do I need full root?

You need to be rooted to remove the bloat apps. But now that your unlocked you can flash a custom ROM that will come rooted.
