Is there a way to use a different GTalk name than the one the device was initially set up as? I have two Gmail accounts and the one I use primarily for gchat is not the one I used for the initial set-up.

I thought there was a way. Did it not ask you to sign up with the one that was on there?
Maybe you need to have the other gmail account setup so you select and choose from it. I do not remember if it gave you an option to type in a different userid than what GMAIL accounts you have installed on the phone.

Forgive me for being a google noob but what is gtalk?

It's the chat function of gmail. You can use it when you are logged into gmail on a desktop and you can run gchat on your mobile phones as well.

Basically. Anyone with a gmail account can use from the PC/Mac, and there's a client for most popular smartphones (even some not so smart phones )
