I'm using the HTC one x and I'm not a fan of the stock keyboard, tried the free swiftkey keyboard and thought it was ok. Nothing great, maybe I just needed to give it some time, but my question is...what's the difference between the paid and the free versions?

The free is just a trial. The paid has nothing more. I would suggest playing with the precise or fast typist settings to see which fits you.

Also, look at giving it access to your SMS & Gmail to improve it's accuracy.

Really helps

I didn't like it until I changed the theme to the light color. Just made it better for me. I love swift key

I agree. The new themes are pretty good. Themes are slow to come by with SwiftKey. But the ones that are released are great.

Also, be sure to give access to your accounts to understand your typing style. Been using SwiftKey for a long time now
