Just disable the pre-installed apps you don't use or don't want. I did that with all but a couple of the AT&T apps on mine. They will disappear from you app drawer but they won't uninstall completely. They will however, stop running and using resources on the phone. On the AT&T version you can do it right in the app drawer, other versions don't have that option I don't think. But you can go into general settings > applications > swipe over to all > select the offending app and then select disable. Be careful though, don't disable anything that may affect your system, stick with the simple carrier added bloat ware. If you ever want them back they will be in the same list of all applications, you just select the app and then select enable.
