Replying to my own post.... I think now that my issue is a different one. I do find that when I restart, I get the list of recent apps that I had before the restart. My problem is the resetting of the list overnight.

I completely agree. I started a thread about this right after I got the Pie update. I got some suggestions there, but none of them worked for me; you might want to give them a try, though. And it's not just a restart: for me, the list of recent apps is consistently reduced to just 5 overnight...

Short answer: we can't. It's not just a software update, it's the operating system. Without rooting your phone, I don't think there's anyway to undo it.
