Gingerbread Home Row Dock App Change

Does anyone know how to change the apps in the home row of the main dock? I'm baffled by this and don't see any documentation on the web.

I would also like to know how to defeat (remove) the crappy MetroPCS Easy WiFi application. I rooted my phone and deleted the com.devicescape.easywifi.mpcs from the data/data folder and did a reboot and it's prevailing here!!! Oh and the Rhapsody app too!
