    Default Unlocked Bootloader

Is the Xoom the only tablet with an unlocked bootloader?

I believe but not 100% sure. It does not come unlocked and you will need to run some Adb commands and all that fun stuff and read how what your doing voids the Motorola warranty. Its not hard if you used Adb for anything and we have some awesome guides on how to.

I thought Motorola would take any 3g and upgrade them to 4g even if it's unlocked so does that still mean void warranty?

When they offer the upgrade they will still do it but if you have any quality issues they would not honor the warranty. Say your screen stops working. Sounds like a manufacturer defect. If rooted they wont fix or replace.

Ah ok. But unrooting and locking is pretty easy.
