Google Now / Moto Assist when on Bluetooth

Now I don't know if this is a setting on the phone or a setting on my car's entertainment center, but I'm starting to realize that I can't give voice commands to my phone when I'm connected to Bluetooth in my car. I have a 2016 Ford Escape, and overall the experience is just awesome with the new Sense 3, combined with my Moto X Pure. And the car's voice commands work great to control my phone, but if I wanted to use Google Now, it doesn't work, or if the Driving Mode kicks in and asks if I want to hear a text message I just received, I can't say "Listen" to have it read it to me. The weird thing is I can swear it's worked a few times here and there, but usually it doesn't...

Any idea if this is something that can be fixed? I'm having the same issue with my Bluetooth Jambox, so I think it's a Bluetooth thing.
