Why can't I see files in Explorer when I plug my Nexus 5X via USB lead into my laptop?

I'm trying to take the photos and videos off my phone to free up some storage but when I plug the device into my laptop - it shows the Necus 5x folder as empty on my screen. Any tips please?

After plugging in, turn the phone on and enter your pin/pattern if necessary. Drag down the notification bar and tap on "USB Connected" and then tap on File Transfer. (something like that; I may not recall the exact words correctly)

You have to repeat this process every time you connect to your PC; it's not sticky.
