Question about initial setup and and activation

So when i get the phone what I would like to do is just play around with it a bit on WiFi without transferring my sim over to it, just to make sure I like it and there is no issues with the hardware itself

Is this possible can I set the phone up using WiFi and skip the activation part basically for the time being?

Yes you can skip set up and just do wifi.
