My two favorite reasons (so far): Titanium Backup to make sure all of my apps and data are safe if I decide to tinker around some more, and making a nandroid backup (using TWRP, of course), because it's always a good idea to keep one around. You never know.

I guess you could experiment with different boot animations, too, if you're so inclined.

All rooting does is give you then option to allow apps to have lower level control to the device, there are no inherent benefits to rooting. The device works just as well as it does without rooting.

Once rooted though, root apps are allowed to do more on the device than before.

    TiBu was mentioned already.

You don't NEED to be rooted to install CWM, TWRP or custom recoveries in general but to install them from the phone via ROM Manager or Goo Manager you would need root. You can always push them manually.

I'm a fan of Ad-Free which blocks ads from the device at the network level, so it applies to almost all apps.

I like root explorer, it's just a root level file explorer.

Unlocking/rooting makes your warranty voidable, in the strictest sense. Meaning it does not void it on the spot, rather allows the warranty supplying party the right to void it if they chose. At least that's how it goes with most devices, I haven't read the english on the Nexus 7's disclaimer... however I also unlocked and rooted mine 10 minutes after receiving it
