Return to stock and wait for an OTA. Either restore a backup you made of your stock system, or fastboot the factory images following my guide. Otherwise you can sit tight and figure that the AOKP team along with all other ROM devs will have 4.2 builds out shortly for your flashing pleasure.

EDIT: Should note that if you restore a backup of a stock system you'll need to fastboot the stock recovery in order to take the OTA as well.

To add to this, you also can now download the OTA directly from Google if you running stock, that last bit is important. If you aren't completely stock it won't work.
So if you "need" the update now, you can use the guide to get back to stock using the images as 2defmouze mentioned and then follow this guide Nexus 7 Android 4.2 update download link now live | Android Central to get yourself up to 4.2 on the Nexus 7
Now that's going to take at least a little leg work but if you managed to get AKOP on in the first place you should be fine with that.
I'd be doing this but it looks like the Pete is already moving on a 4.2 update for Bugless Beast so I'm going to sit tight and wait patiently, just minus the patiently part. - 11-13-2012, 07:49 PM #4

Because of the multi-user abilities in 4.2, the partitions have changed and will probably cause lots of headaches with apps and processes.
In 4.1.2 there was a /data/media partition that now in 4.2 is /data/media/0 for the main user, and it's incremented for each user added (/data/media/1/, /data/media/2/ and so on)
Symlinks shoud fix it, but then the ability to have separate user spaces will be gone.
Is there an app for that?

flashed 4.2 today from google. works pretty well. got a adb fail when trying to side load it in sdk. had to flash the stock image back... seems the nexus 7 doesn't like to update after you mess with the kernel

the new separate drop down for the settings caught me by surprise, but looks really nice.
now just have to get int on my vzw gnex :/
