You download the the packs from the market, and then use the "Theme Chooser" application found on your phone to chose it. Chose your theme and reboot to allow for the theme to fully apply, and you'll be good!

For the most part rebooting shouldnt be necessary.

Search Google for CM7 themes and you'll find a bunch. Just make sure they work on MDPI phones

That thread has themes that will play nice with CM7 also.
There are a bunch of good lookin ones there and some good advise on how to cook yer own.

True. However if a theme changes the notification bar, a reboot may be necessary in order for it to be set completely. Generally the app developer states whether or not a reboot is necessary in the description.

Yeah thats why I said shouldnt.
I have had a themer say no reboot and the them not take effect till I rebooted haha.
