Really would like to root my other android phones, used by my kids. But don't want them to have true root. Would prefer a sudo install that would give the certain things. Daughters wouldn't care one way or another as long as they have unlimited texting. But my son is a twiddler like his old man, and he's not smart enough to know that he's not smart enough sometimes, like me. Ya know? LOL.

I imagine you could go into the superuser app and deny all requests and then remove the superuser app...? That *should* prevent any app trying to request su access from requesting it. It would see that the app isn't there and should just default to normal...
If they know how to use adb shell, then you're already in too deep and it may be time to teach them a little something
