Do I need 'Verizon Cloud' - Can I uninstall it ??

I use google contacts, so my contacts are already backed up on my gmail account, right?

I backup my photos on google+ & dropbox already.

I dont need to back up videos (or want to).

Can I not just uninstall Verizon Cloud ?

You cannot uninstall it without first rooting your Note.

That said, IF you do want to uninstall, make a backup first. Carrier apps tend to be tied closely to the phone and deleting can and often does cause issues.

There are other, less dramatic options... just turn it off. Hide the icon. Use Titanium Backup and freeze it.

I may just turn it off, then. I just hate to see all these apps that I do not use 'updating' all the time.

I thought to use titanium bkup, or freeze an app, I had to be rooted? Was I mistaken?

Yes, that is correct that you have to be rooted to freeze an app. You can turn it off without issue.
