I am having this same problem with a T mobile Note 4 running 5.1I'm having the same issue. Here's what happens,
1. You click on the icon to send a Text Message (actually, it can be any app)
2. Click the microphone icon.
3. The google Speech-to-Text menu pops up and fills half the screen. In the middle is a round circle and above it, it says, "Tap-to-Speak".
4. You tap the circle and say the text message you want to send. Google converts that to text and the google menu goes away and you are left with the text ready to send.
5. Sometimes the Google Tap-to-Speak menu goes away, sometimes it doesn't and it remains on the screen until you reboot. I called verizon about this and we made sure the phone and apps software was all up to date. Then we did a soft reset. The final step, which I have not done yet, is to do a Factory reset.
6. As far as I can tell, this started about a week ago and as far as I can remember, I did not install any new apps or make any changes to the phone. Any thoughts as to why this started?
I have a galaxy s4 and I went to application manager and then to google app. It wont let you uninstall it but you can uninstall the updates and then it asks you if you want the factory version and I chose yes. Then my screen problem was fixed. Hope this helps.
I did what you said and took my Google back to factory and now the text to speech is gone completely.
