I'm switching to T-Mobile and they're telling me that my Verizon Note 5 will work on they're network. My question is does the Verizon Note 5 have band 12 to take advantage of T-Mobile's enhanced LTE and will wi if calling work? I have looked all over and can't seem to find a solid yes or no.

You won't have Wi-Fi Calling... you need to have a T-Mobile model (loaded with T-Mobile's flavor of the Note 5 firmware) to get that. Not sure about VoLTE and Enhanced LTE stuff, that might also require T-Mobile specific software. And the Verizon model (SM-920V) has band 4 (which is T-Mobile's main band), but it won't have band 12.

CDMA: 800, 1900 MHz
FDD LTE: 700 (band 13), 1700/2100 (band 4), 1800 (band 3), 1900 (band 2), 2600 (band 7) MHz

I've tried it with a T-Mobile post-paid SIM card. SMS and voice work fine, obviously. Data is slow, but that's just because the Verizon doesnt' have the right bands.

All four of my Verizon Note 5 phones have AT&T SIM cards in them and they all work perfectly with AT&T 4G.

Just did a Speedtest.net tes a few minutes ago and shows I'm getting 18mbps down and 3mbps up from the AT&T 4G network, which is quite respectable, considering that is' on a Verizon Note 5. Verizon's own 4G speeds are about the same for my area.(rural to suburban)
