How do you edit an existing note?

This is my first galaxy note. Please don't tell me you can't go back and edit a note after saving it; that would be lidiculous. Please tell me how?

If using the Samsung Notes, place your finger on the page you want to edit. An icon will appear, and scrolls the page up to allow you to edit the note, drawing, etc.

I figured that out as well, my 1st Note smart phone. Now I need a tutorial on working with the Samsung Notes.app!
I want to organize my notes into folders, if possible. Perhaps a folder for each date?

Double tap ! That was what I needed. I looked through all the menus and options and 'edit' was nowhere to be found.

Not very intuitive on mine, but doable. There are options at the top and bottom after you tap it in open view (I had to do it twice),
