Samsung keeps freezing

I have read threads about this but when i try to clear the cache on touch wiz its grey and says 0.
Shall i clear the data instead?
It lags in my touch, and freezes. Apps sometimes automatically terminate.
I think it could be related to the new update.
I have started deleting a lot of apps. It still does not seem to do anything.
I notice its a lot more when charging. Or it may be a coincidence.
How do i do a factory reset without loosing the data on my apps and all my apps?

The whole point of a Factory Reset is to wipe everything out and start fresh - you will lose your apps/app data.

You can take steps to backup/sync your existing data so that it can be easily restored:
1. Make sure you manually sync your Google account
2. Use the Kies software on your PC to backup everything (contacts, SMS/MMS, pictures/videos, call logs, etc)
3. Use Helium: http://market.android.com/details?id=com.koushikdutta.backup to backup your apps and app data
Edit: you could boot into Recovery mode and clear the cache. Or clear the data for TouchWiz.
