Installing Lollipop

I have an SGH-I257 (AT&T). It was rooted and I kept meaning to unroot it to install the Lollipop update so last night I did using Kingroot because that's the only program that would root it in the first place. RootChecker says it's not rooted but the update still failed. And I have to wait to try to update it again. (It wasn't charged so I charged it overnight and then it did who-knows-what last night while I slept.)

I was considering doing a factory reset anyway and made sure everything was backed up today but I deleted a bunch of stock apps and such. Is there a better way to install the update and keep my root or easily re-root after install? Or should I just wipe it all and start over?

And is there a better way to root after the update? I don't love using Kingroot because it's in the minority of apps and I don't totally trust it as it always tries to install extra stuff on my phone.
