Still learning my way around the s5...would this be considered a launcher or just some type of themeing app?
Are there any reasons, other than aesthetics, to run a launcher like Nova?

Re: Toucher Pro
That doesn't seem like a launcher. They call it a "point and click" tool. You can customize it with themes, but it doesn't appear to apply themes to your entire homescreen--only to the tool.
3rd party launchers give you much more flexibility than most preinstalled launchers. With Nova Prime, for example, you can remove the Google search bar, change the size of widgets, change how many homescreens you have, etc. Many of these features are also found in various manufacturer skins, but you usually can't customize them to the extent you can with Nova and other 3rd party launchers.
Also, since these launchers may be leaner than more complex (and bloated) launchers like TouchWiz, you might see an improvement in performance.
