If I leave my s5 on but not in use it will enter Odin mode with following message:
Boot Recovery Mode
Check Boot partitions
Sbl1 partition doesn't exist
Ddi : mmc_read failed
ODIN MODE

This is followed by prout info.
If I hold down power and switch off then restart it loads fine. Will then work until left alone again.

Any ideas why this may be?

Welcome to Android Central! I don't know for sure, but I'd guess that it's either an impending firmware or hardware failure. Make sure all of your important data is backed up or synced, in case the phone completely fails.

If you have an SD card, Unmount it (in Settings>Storage), remove it, and reboot. If it continues without the SD card, then try wiping the cache partition: https://support.t-mobile.com/docs/DOC-28492.

A last resort would be to re-install the firmware, using either Smart Switch (http://www.sammobile.com/forum/showthread.php?t=29914) or Odin (http://forums.androidcentral.com/am...w-flash-stock-rom-via-odin-new-interface.html).
