I don't want to install Lollipop (I did not like it on my Nexus 7 and went through the hassle of "downgrading" back to KitKat). On the Nexus 7, when the Lollipop notification reappeared, I was able to long-press it, and select app info (or something similar), and uncheck a box for notifications, and since then I no longer get notices about Lollipop being ready to install. This does not work with the Tab S (the check box for notifications is grayed out and cannot be unchecked). Is there a way to kill this notification? My Tab S is not rooted.

I don't know of any way if you don't want to root it. If you do, freeze the update app (which I've deleted and can't remember the name of).
