OK, so I don't know if anyone else has run into this yet, but thought I would post it just incase.
I ordered a 32gb MicroSD (as Samsung says that is the largest the phone takes), they shipped me a 64gb by mistake. I decided I would try it, since I already had it.
Here are the steps I used to get everything working.
Step 1) Create Swap Partition at the beginning of the card.
I used 1gb for swap, prefer to be safe.
Step 2) Create an ext2 Partition next, make it primary. (I used minitool partition Wizard)
I used 2gb for ext2
Step 3) Create your Fat32 partition with the remaining space.
Now follow the standard procedure for creating a mount script in Link2SD.
What you need:
Rooted Samsung Galaxy Victory
64gb Micro-SDHC card
Minitool Partition Wizard
Link2SD installed on your phone

I found that the order of the partitions played an important role in getting this working for me, but you may have a different experience.

OK, so overnight the swap partition seemed to take over the entire card, so I am removing it from my card and will update how it works.
