The S5 doesn't have an official Nougat update, unless you meant a different Galaxy phone. The last update was Marshmallow, so it sounds like you're at the end of the cycle anyway. The only way to get Nougat would be to install a custom ROM on it.

That sounds like the Smart Stay feature. The icon comes on when it's detecting your face to see if you're looking at the tablet. You can turn Smart Stay off under Settings > Display.
