What do the two colors I see for the signal bars signify? Sometimes it is blue and other times it is grey. Does grey just mean a worse signal?

yes, grey is not connected to data, blue is data connected. I occasionally see it grey when on a call and on 3G.

Grey means that you are not connected to Google Services. Blue means that you are. So, of course when you have no data connection it will always be grey but it is possible for you to have a data connection and not be connected to Google Services.
