I keep getting this odd blue screen sometimes when I hit the home button. If you hit the X it takes you back to your last application. I have a feeling it has something to do with Samsung Voice Control and driving mode (which keeps coming on).

Edit: I uninstalled stock voice control and the problem still persists.

That isn't driving mode it is dock mode. Check all the apps you have running, also do you have maybe an aftermarket case or are using a different charger than the one that came with the phone?

Long press the home screen then open the task manager and see what is running when that blue screen pops up. If there isn't an app running then I imagine there is something triggering it via that mini usb.

I tired 3 different process managers, 2 task managers, unplugging it and uninstalling a few different apps. When I restart it the phone'll go an hour or so without the screen coming up.

Do you have the original case on or are you using an after market?
