Rooting and OTA updates
With this phone, and I got the latest OTA update today, can I root it, and install OTA updates? I know I could do this with Motorola phones. I just don't wanna root it and then have to miss out on Jelly Bean.

This is by far the easiest way to root your gs3.

It will not add flash counts, nor will it delete any apps or data. However it will take your phone back to Len version. But if you're going to be flashing Roms it won't matter as it will be updated to the version of Rom you're installing.
I will be posting another tutorial on how to unroot tonight when I get off work and it's even easier than rooting. It also will not delete any data or apps.
Do not let the fear of missing updates stop you. It's really not a factor.
