You find the kernel you want and dowload it to you sdcard. Boot to recovery wipe cache and dalvik cache, and then flash the kernel. To revert simply follow above steps for wipe and teflash your ROM and gapps.

Kernel flashing doesn't erase your data.

So to undo, I have to reflash the entire ROM?

Or flash a different kernel. To get back to the CM kernel you'd have to flash the rom again, but no need to wipe data.
