Changing Color of Display Text

I am testing an app that is running on two devices (both have the same version/build): Samsung Galaxy SGH-i717 (Note 1) running Android OS v4.0.4, and Samsung Galaxy GT-N7100 (Note 2) running Android OS v4.1.1. When I perform the same function in both devices, I enter a text field. In the Note 1, I can see what I entered in the text field, but I cannot see what I entered in the text field in the Note 2.

Is there a way to change the text color in the device itself, or is this issue specific to the app itself?

Please advise as I need to verify some bugs, but I came across new issues along the way. Thanks.
