Here's the way I do it. While holding the screen in portrait mode, I swipe from left to right holding my hand perpendicular. Hold your hand like you are going to clap. Then swipe from left to right across the screen and you'll hear a click and it'll save it to a screen capture file and also to the clip board.I hope this helps.

Hold the volume down and power buttons at the same time works as well.

I tried that but it didn't work. Is that something only the N7000 does? Or perhaps I did it wrong? When I squeeze the volume and power button it either powers off or shows the volume and then powers off. Am I doing it the same way as you do?

Hmm, that is suppose to work on all android phones.
I have tried it myself on my Galaxy Note, HTC OneX, Samsung Infuse,
Samsung Galaxy S, and Google Nexus.

I think thats only for Ice Cream Sandwich.
