Question now that I'm rooted

hey guys, i rooted my note a few weeks ago and haven't really had time to go through and remove all of the bloatware. when i go to remove a lot of the at&t stuff i get the message that "some system packages are needed for my phone to work properly" i guess my real question is what at&t bloatware can and can't i remove?

Pretty much read up on the XDA forums (the root community), you can use Titanium Backup to basically freeze all AT&T bloatware or since you're already rooted, why not just switch to an ICS rom?
